Caco, o Original
The slightly sweet bolo do caco bun from the island of Madeira has established its foot-hold in the city, but as any Madeiran will tell you not everywhere that serves them can boast of their being authentic. This one can. The recipe at ‘Caco, the Original’ is from one of the island’s oldest families, and appears here thanks to the initiative of a company from Leiria, in central Portugal. The result is a genuine bolo do caco, served in the classic version with garlic butter, ham, cheese or pernil (roast pork shoulder). It comes with chips seasoned oregano. For desert there is an original ‘pastel do caco’ – a sweet bean tartlet.
