The son of a Portuguese father and English mother, Miguel Laffan was born in Cascais 36 years ago. He realised at an early age that much of his life would be spent in kitchens. When he finally decided to commit himself to it as a career, he also realised that he had to leave Portugal to learn. And that is what he did, moving from Spain to Brazil to France, always picking up the kind of experience that any professional chef needs. In those years he worked in various Michelin-starred restaurants: the Fortaleza do Guincho (in Cascais), Le Jardin des Remparts (Beune, France) and Le Clous de la Violette (Aix-en-Provence, also France). He also headed up the kitchen in the restaurants of two leading hotels on the island of Madeira (Casa Velha do Palheiro and Quinta da Casa Branca) but it was in the Alentejo, at another hotel, that he managed his greatest feat so far. In November of 2013 he brought the first ever Michelin star to the Alentejo, at the restaurant L’AND in Montemor-o-Novo. At the end of 2015 the restaurant ended up losing its star, when the chef was already dedicating himself heart and soul to his new project at the Time Out Market. It is one where, you may be surprised to learn, grilled chicken is the star. Tasting is believing.
