At Lur—the Basque word for earth—the triple-threat chef, baker and sommelier culls from his myriad culinary experiences (like learning husbandry in his native Izurtza and working the line at various Michelin-starred restaurants) to create a jaw-dropping tapas experience. During regular service, diners get to taste their way around northern Spain, sampling the region’s hallmarks like silky gazpacho and poppable croquetas that are crispy on the outside and creamy on the inside. On Friday nights, chef rolls out the red carpet for a spectacular tasting menu of seasonal dishes and mouthwatering specialties, including a sweetbread sando you’ll surely be head over heels about.
